I was trying to decide what to do with some left over BBQ'd springer last night and I "invented" this.
This recipe is for 2 Sandwich's:
Left over BBQ'd Salmon (12-16 oz's)
1 large clove minced Garlic
2 Tbs Butter
1 avocado (cored/peeled chopped)
1 medium tomato (diced)
1/4 Cup Cilantro (Chopped)
1/4 Lime (Juiced)
1/8 tsp Salt
1/8 tsp Cayenne
Cream Cheese
2 pieces flat bred
In a small mixing bowl combine Avocado, Tomato, Cilantro, Salt, Cayenne. With a fork coarsely mash together. Add lime juice. Set aside.
In a medium skillet, melt butter and saute garlic. Remove garlic and add to Avocado mixture and stir. Add Salmon to skillet break apart with fork and saute in remaining butter. Cook Salmon just long enough to get it hot and add a little crust to some of the edges.
While the salmon is cooking heat two pieces of flat bread.
When Salmon is done, remove flatbread from oven, apply cream cheese to bread, add Salmon, top with Avocado mixture. Fold flatbread in half and dig in!
This was a first run, but it was pretty good

Next time I am going to add roasted red peppers to the avocado mixture and saute sweet onion with the garlic.
