Do you eat salmon cheeks?

We always cut out the cheeks to put in the smoker. In my opinion they are the tastiest part of the fish.

I am surprised at how few people seem to do the same.

I just put them in a vacuum bag until I get a bunch then they go on the top rack in the smoker.

I certainly do! I smoke them and the front fins, and the belly meat. You'll find the same type of meat behind those front fins. The front fins are kind of like the drumsticks of salmon. YUM YUM SUPER GOOD! I've got a friend that even gets the same kind of meat in the head of the fish somewhere on the inside, but I don't go that far. I'm not talking about the fin spines, but the meat behind the fins. OH YEAH, GOOD STUFF!

oh yeah, Fried for breakfast with a couple of eggs they are excellent. I usually give mine to my Dad because He likes them so well. I do get most of them now that he Moved to Sequim though :smile:

Cook them with hashbrowns and serve with dill sauce for breakfast. Add a couple of eggs and enjoy a very French dish. :grin:

Well it sounds like I might need to have some cheeks for breakfast!

I posted this because I took a friend fishing Thursday and he got two nice big fish, before he left I asked him if he was going to eat the cheeks or if I should just cut them out. He said "oh no I will try them". On Friday he comes over to fish and brings his heads to dispose of cheeks and all. :depressed:

About ten years ago I was cleaning fish at the Guides Shop's old cleaning station - I use to love the view from that place - and an older gentlemen was there cutting up the heads of salmon. We talked for awhile and I've been hooked ever since. Saute in a little butter and garlic...YUMMMMMMMM. We've even put them on a stick and cooked them on the campfire.

i haven't but i'm gonna start. i'm willing to sacrifice a pretty filet for the sake of getting as much fish flesh off the bone as possible. how did i not see those cheeks?
