Default Help

Is there any way to smoke fish or meat with out useing sugar.I'm a diabetic and trying to stay away from sugar

I know some that just use rock salt - do a search for Puffin or Pilar's brine method,

yep, just cut into desired chunks and roll them in salt. any salt works, i use table salt. Place the fish on the racks and let set for 4 hours or so, once the salt has all dissolved place in smoker.

I'm a Type 2 Diabetic and the amount of sugar I use in my brine mixture has been reduced by 1/2 but not eliminated. Not much of the sugar is absorbed into the fish anyway. I have more problems with my blood glucose level rising because of the Ritz crackers I enjoy along with the fish.

You can try using a sugar alternative that they have in Diabetic cookbooks and then after you brine it make sure you wash off the brine...that should eliminate most of it!!!
