Default If You Need Ideas(+a recipe)

If anyone has some fish/game that they just don't have any idea what to do with, or maybe you want to try something different, post it here!
I'm experienced in cooking a wide variety of foods in lots of ways, so i can probably help with whatever it is you need.

I'll open the thread up with a slow cooker salmon recipe!

what you'll need:

1 6-8 oz fillet of salmon
3 oz of unsalted butter
1 oz olive oil
salt
pepper
crock pot (or if you can afford it, get a sous vide circulator!)
vacuum sealer+bags

what you'll do:
more or less, throw ingredients into the bag, and seal it pretty tight, but not tight enough to tear the meat. BTW you will need to use alot of salt, since you're not actually seasoning the surface alone, you need to use an appropriate amount to season all the way through.
set your crockpot to 135F, and fill it with water (with the circulator, fill a tub with water, set the circulator in and set to 135)
place the bag into the water, and let it cook for 3.5 hours. I know that's a long time, but it'll be good, trust me.
If using the crockpot method, you need to ROTATE THE FISH EVERY HALF HOUR OR SO to insure even cooking. with the sous vide circulator you can just let it sit.

Anyway, once it's all said and done, the fish should ideally be eaten right away, and will taste great right out of the bag. you could attempt to sear it if you'd like, but it will be difficult since the fish will be so tender.
if you want it for later, then refrigerate right away, since the fish is at this point about an hour away from being bacteria haven if left at room temp.

goes great with rice!

I tried a similar method for cooking salmon. Instead of using a crockpot I used a large pot with hot tap water at 115 degrees. The fish was placed in a bag with olive oil and salt and pepper. The idea was to warm the fish to 115 degrees. I had to add hot water several times to keep the temp. up, but my fish got 115 in about 35 min. The skin was then removed. I seared it quickly on all sides in butter. It was very moist and juicy and delicious. The method of cooking is called "sous vide". The recipe came from the New York Times website. Bill

What would you recommend doing with a venison shoulder roast?
I was debating on using the crock pot, or smoker...

Put in crock with a packet of french onion soup mix coated over the shoulder and 1/2 chopped onion.
