Default Fish Jerky in the Oven

Hey,
Here's my poor man's recipe for good fish jerky using an oven. I just cooked up some steelhead jerky, and it's amazing!

1 cup brown sugar
3 tblsp Old Bay seasoning
1 or 2 tblsp soy sauce or teriyaki sauce
1 cup boiling water

Mix sugar, seasoning, and sauce in a bowl. Add boiling water and stir until the sugar dissolves. Let it cool to room temperature. Cut fish into strips and place in the marinade. Let the fish marinate for 10 to 12 hours. Pat dry fish to remove excess marinade. Place fish on upper rack of oven, and place a cookie sheet on lower rack to catch any drips or falling fish. Cook at the LOWEST TEMP POSSIBLE for 8 to 10 hours, depending on how dry you like it. Once done drying place fish in a Ziploc bag and store in fridge.

Not too sure about fish jerky, but I'll try anything once, twice if it doesn't kill me.

I had never heard about people making jerky out of fish until I went up to Alaska (Turns out that 90% of all meat sold and consumed in Alaska is jerky :-). It was salmon jerky...really good. I've also heard about people making jerky out of trout and halibut. Great on-the-go food.
