Default Picnic ham brine?

I need to find a brine to make a picnic ham. Does anyone know where to find one? Or do you have one I could get.

I want to brine and make my own ham, just need the brine recipe.

Googled picnic ham brine and came up with a few good sounding ones...might try that myself.

morton makes a pre-packaged mix for curing your own ham. I picked one up (5lb bag), but haven't had the time to mess with it yet. I think Freddy's carries it.

This is what I use for Canadian Bacon. For a Picnic I do the same just up the recipe size.

Canadian Bacon

Pork Loin

1 Quart of Water
Dextrose 3 2/3rd Tablespoons
InstaCure #1 1 Tablespoon
Plain Salt 2 ½ Tablespoon
Pump 10%

Soak for 24 to 48 hours. The longer soak and more you pump the saltier it gets. Ham takes longer the pork loins. (3 or 4 days)


Instacure is AKA Prague Powder #1 it is salt and sodium nitrite (6.25%)
It is where you get the "pink" in ham. If you want to know where to get it send me a PM.

You know - I heard you can use this ham brine for your wild ducks and it turns out great. Have you ever try'd it?
