Default Pickling Cabbage

Anybody ever had any experience with pickling cabbage?

Sounds like saurkraut is a pickling process. If that is what you are trying to do. You need a special crock and its a simple process of shreding the cabbage and packing it into the crock with a amount of salt added every few inches of shredded cabbage. Place a weight on it and store in a cool place for about 4 weeks. There are several variations of doing this with other ingredients added. Also there is a Crock made in Germany made special for this and comes with derections on how to do it.

Well, not exactly what I was thinking but, that does sound fun.

I'm trying a bit of an experiment. I've posted here about pickling jalapenos so I thought I would try something similar with a mix of cabbage, carrots, cauliflower, and pearl onions. Simple pickling brine (vinegar, water, salt, sugar, garlic), cold pack, and seal. Who knows, perhaps mine will be like saurkraut.

Just wondering if anyone else has tried such a thing.

Sounds like you would want to know about the Korean dish known as Kimchi.

Sounds good with lots of regional variations.

Sounds like what I keep seeing out here in Virginia in all the stores, chow chow. I hear its real good, it's spicy pickled cabbage with other vegetables. Haven't tried any yet, I think most people mix it with beans.
