I looked up a handful of instructions and found some long cooking times. Low and slow 6-8 hours and higher heat at 4 to 6. You might want to wait a few hours before tossing in the veggies.

Just treat it as chicken, but add extra liquid as the pheasant meat can dry out more than a chicken. I prefer chicken broth over water. You can also brine it in a salt solution before crock potting, but I think that is overkill.

Another option is to wait until the end of the season and pressure can all the birds you have shot. The best bird type meat I've ever tasted!

Pheasant in a crock-pot..........

This is my favorite.............
Split pheasant in half (or quarters)
sdd some poultry seasoning (mixture of a bunch of spices) to taste.
add 1 Granny Smith apple, cored and cut into eigths
add 1 large can chicken broth
add water to completely cover pheasant

Cook on high setting until meat starts to fall off bone (apprx. 4-6 hrs.)

While cooking don't let it dry out, add water or more broth as nessacary

When done remove meat from bone and retain liquid.

Cook up a pot of wild rice

Plate of rice, add pheasant on top and pour on some of the liquid
