Default Smoker

So I just picked up a propane smoker and am kind of confused. I have lava rocks which distributes the heat. But I'm lost after that, do I put the soaked chips on top of the rocks and then have a pan of water above the chips or do you guys leave the chips in the water???

If your smoker doesn't have a pan for chips between the heat source and water pan,soak your chips,put them in two wrapped aluminum foil packs and place them on your rocks. tear holes in the foil or leave it partially open for the smoke to escape.

It would seem like the instruction that came with the smoker would answer this question.

But you wouldn't want to put chips on the lava rocks as this would create ashes which would be a problem in cleaning it up and would probably cause long term problems. A pan or some container to put the chips for smoking is needed. Aluminum foil will work but if it gets to hot Aluminum will burn or melt and cause problems so a metal pan of some kind seems needed on top of the lava coals.

What's the brand name of the smoker?

It brings up some other problems like when you are smoking a turkey or some meat that has fat dripings where do they go with out falling on the lava coals and starting a fire?

I use heavy duty aluminum foil to protect some areas of my smoker, but I have a different kind of smoker (Electric, that is computer controlled for Temp. ) than you are talking about.

My Smokey Mountain came with a chip box which sits right above the burner. The fluid bowl sits on top of that. Might check and see if yours should have came with one. If not you can find one at one of the BBQ accessory stores. If you have room for it, it would solve your issue. Like I said mine came with one, but I went and bought one for my BBQ and cook indirect and get the full smoke effect.
