With all of the green tomatoes on the vine and the summer coming to an end, not all is lost. Fry them up and if you want to get fancy add a little crab on top.
Here is how I do it.
slice the tomatoes in ¼” slices.
Sprinkle with Johnny's on both sides and let stand for 15 min.
Dip in flower, egg, and then bread crumbs.
Fry in olive oil for a few minutes on each side.
They are now ready to eat or, sprinkle crab meat on tomatoes then a little cheese of choice. Drip melted butter on top of it all.
Put on a cookie sheet and broil until cheese is melted.
The last time I made this I made a chanterelle risotto with it and it was an excellent combination.
