smoking tuna?
Can anybody tell me if smoking tuna after its been frozen is ok, because sturgeon gets rubbery if its been frozen?

Just ate some last night. Kids and wife loved it.

Good question esoj. I'll be smoking frozen tuna after deer hunting. I wasn' sure if it was going to be any good.

I smoked a bunch about 2 weeks ago that had been frozen for a year. It was good, Very Good! I'll be doing more probably tomorrow.
