i do basil, dill weed, garlic, salt, and fresh ground peppercorn. I blacken the fish on both sides, then cook on medium till done. simple, yet delicious!

4-6" fish fillet and scale & slime it.
in small bowl combine
2 tbsp worchestershire sauce
some black pepper, 1/4 tsp
2 cubes of melted butter
2 tbsp of terriaki sauce
1 tbsp of "Beaver mustard sauce"
stirr it up real good with a fork or wisk
wash fish real good, place fish on double layer of foil pat dry with paper towell, then put in a baking dish or on bbq.
If putting on bbq I will sometimes wrap the fillet in foil and pour the baste in with the fish and cook it on med heat for about 15 min and flip it over 1/2 way thru cooking time.
Bake 15 Min for a 1" fillet, at 450, baste half way thru time.
Serve with wild rice Pilaf, steamed carrots and green beans with some Chardonnay wine.

I place the steelie fillet in a foil boat. I like to rub olive oil on a filet. Then I coat with brown cane sugar. When the sugar disolves I sprinkle sea salt and fresh peper on the fillets. Sometimes I put a little parsley on top of that. I like the bar-b-que but have used the oven. It doesn't take to long. Maybe 10 minutes. Which ever way you go Do not over cook.

steelhead on the bbq:
1.Put whatever you want on your steelhead for seasoning.
2. make sure grill is ready to use.
3. even better if you have Traeger or some sort of smoke induced grilling method 
4. (the special secret) place steelhead, meat side down, on grill.
5. let cook desired length..... skin will be able to peel off with fork when done or close to it. Peel off skin and throw skin in trash.
6. with steelhead done cooking, take spatula and flip grilled salmon meat side up on clean plate so grill marks are showing.
7. Immediately cover with butter.
8. Stand back and watch the carnage. I call it poor mans lobtsa!

This sounds boring, but it's incredibly good! And it's very quick and easy, you can cook a whole fish in 15 minutes.
Cut your fillet into 3" strips, lightly coat flesh side with olive oil, season with sea or kosher salt and fresh ground pepper.
Preheat your grill to med-high heat, when heated, clean the grill VERY well and lightly brush with oil. Place the steelhead flesh side down on the grill and cover it, DO NOT TOUCH IT for 7 to 9 minutes, if you try to flip the fish too early it will break apart and stick to the grill, if you wait, you will be able to simply grab the pieces with tongs and gently wiggle them free, they will come off the grill no problem and with perfect grill marks. Flip the pieces over and cook for one to two minutes on the skin side, now, slide a fish spatula between the flesh and skin to remove just the flesh, the skin will stick to the grill. It will vary from grill to grill and fish to fish, also check your grill for hot spots, fish will cook faster there and need to be flipped sooner.

I like to skin the fish and cut the fat from between the meat and skin off first. Then rub with Spade L seafood rub or whatever seasoning you want. Get grill hot and clean and spray with pam for grilling (or rub olive oil or whatever on grill, really doesnt matter). Cook fish for a few minutes then carefully flip, it wont stick as long as you oil the grill first. Squeeze some fresh lemon juice on chunk of fish. Cook for a few minutes on that side, then carefully remove from grill. I really like this recipe for springers too. It can be used for any fish of course and each fish comes out a little different but they are all good.

crazy but oh so good. cut into strips and batter them in pancake batter and pan fry till golden brown. It is so good best fish and chips ever. If you use the just add water pancake mix use beer instead of water and you will love it.

useing the whole fish body i cut off the fat and fins and tail then coat the inside with mayo and salt and pepper and garlic and then add sliced sweet oion and sliced lemon and lime then wrap it in foil and put it on a bar b or over at 350 and cook for 10 min then flip and cook for 10 min or untill you can remove the back bone and serve and watch them go nuts
