Craw Fish
Just starting something, I am looking at getting into some of these tastey little guys. any help would be good. From Catching to cooking post here. Thanks!

I have always been told not to eat them out of the Columbia. Depending on how far you want to go, Lake Billy Chinook has tons of them.
I would do a search for crawfish boil. Those good ole boys down south really know how to cook them up.
I have found a great place off of Division called "My Brother's Crawfish". The best crawfish boil around. Jake's has nothing on them.

I plan on fishin in the Walla Walla area or maybe some of the local lakes. I know the water is to salty here in Ilwaco. Thanks for the advice on "My Brothers Crawfish" though. ~ Matt

I love crawfish. Last time I went we must of got a hundred of em. I'm not sure if that is a lot. But they were great eating with garlic butter.
I am also interested in finding out more ways of cooking them. I will be lurking.

There is a limit of 100 crawdads a day per person, with 2 limits in posession. You don't need a fishing or shellfish license though. The fishing regs have a fish advisory page listing contaminated waters that might be good to check out. I haven't tried crawdads, but grilled lobster tails are my favorite. Enjoy your feasts, they're one of the tastiest meals around.

shad and carp are the best bait. I would't be afraid of eating them out of Columbia. fished for jakes for several years.

We used to catch them for bail in the Klickatat. We had so many that boiled some up in light salt water. The problem is that the tails are like eating peanuts as they are kinda small. As far as tast goes its just allright imo.

I would agree that eating a CR crawfish is not going to kill you or even make you sick. I do it all the time. In fact, I see commercial guys harvesting them for Jakes and other seafood distributors in both the CR and the Multnomah channel. I don't "suck the heads" like htey do in Louisiana, but its a treat to have a mess of them. I simply boil them in slat water just like a crab and then eat them. I must admit, Ioften ask myself, is this effort to get that little piece of meat out of the tails and the claws really worth it??????? Guess it is the same quesiton I ask myself as I spend hours cleaning razor clams.......lol

We like to steam them, shuck them and put them into a cream sauce (bechamel - with garlic of course!) and serve them over egg noodles. Yum!

We used to snorkel for them. Wear a glove and carry a potato bag with the holes in it. We always got as many as we needed.

We twist the claws and tail off and cook them in salt water. The reason is it allowes access to the crap line in the tail. Gently twist the midddle fliper 90 degrees or so and gently pull the it out. If you boil crawdads whole you are eating their waste. It may not hurt you but I can't stomac the idea.
On the Nestucca try under fist bridge and move up. Great plcae to catch "Mud Bugs" by hand.

All the lakes up on Mt. Hood have thousands of 'em...personally i get mine out of the washougal river - i boil with a few squirts of olive oil, minced or garlic powder, onion powder and seasalt - good with beer (but isn't everything)

One way we really like them prepared is............
Boil with a spice bag (creole seasoning is a good one you can buy at the store). After they are done boiling crack all the tails and claws and arrange the meat peices on a cookie sheet. Place cookie sheet under the broiler for a few minutes. You'll want to keep a close eye on them in the broiler as they will crunch up pretty quickly. Remove and eat with melted garlic butter. They will be the consistency of popcorn shrimp.

We had a few beers one evening after catching a bucket full and got a little ambitious. So after we boiled them we shucked em', dipped them in a beer batter (of course  ), and fried them just long enough to cook the batter. They were dang fine.

This year I tried something simple but different. First I de-poo them then just throw them on the grill. I don't think I will ever boil them again!

My favorite bait was always beacon. Boiled for 20 min in pickeling spice. Twist the center fin of the tail gentely back and forth and pull to clean the tail meat.

 Pickling spice works good, also. Drain, spread it out on the picnic table and chow.
