Ak poke'
So a coworker passed this recipe on to me and it is amazing thought I would share with the Ifish community.
4-5 # of fresh sockeye salmon (or other fresh fish -cut into bite size pieces)
1 cup soy sauce
1-1.5 cups chopped green onion (all of the onion)
1 cup sweet vidalia onion (or similar chopped finely)
6 fresh garlic cloves (chopped and roasted)
2-3 table spoons Siracha chile sauce
1/2 cup lime juice
1/4 cup basalmic vinegar
3 table spoons fresh grated ginger root
1/2 cup sesame oil
1/4 cup peanut oil
3-4 table spoons of toasted sesame seeds
1/2 cup toasted macadamia nuts finely chopped
Combine all of the ingredients and mix well. Add the, cover tightly and let set overnight if you can!

Was just in Maui last month and they had poke in the deli section of Safeway...They gave me a few samples and it was GREAT!
Will have to try out this recipe! Thanks for adding.

You eat it "raw" but it is cooked via the acids in the brine. Not really sure of the correct pronounciation.....very good no matter how you say it!
