Fixed the greatest nachos with my girlfriend last night!
Fry up some wontons in peanut oil to make the chips, cajun up some ahi, and sear it on all sides, but not cooked through. Then grate some cheese, melt it over the chips with the broiler, add the thin-sliced ahi over the top with avacado and wasabi cream sauce. We also bought a teriyaki-wasabi sauce to go with it.
