Default sturgeon recipies

Tried a search on this and didn't find much. I've never had sturgeon and am looking for something simple and tasty. Thanks.

Deep fried is fantastic. I use Pride of the West batter mix which you can get about anywhere. Yum!

Real easy way after cleaning the fish and try to get all the fat off, you then cut in into cubes about 1 inch. Next bring pot of salted water to boil and drop in a 10 or so cubes and when they start to come to the top check for doneness. Dip in butter & lemmon or other dips.

batter of rice flower and soda water, some lemon pepper, cube your sturgeon deep fry and BAM good viddles. Also like it smoked, and boilded. We boil it with sugar in the H20, and some dill. Know how you cook a kidney...boil the pi$$ out of it.

If you don't try some on the grill you are missing out. I just sprinkle some Johnny's Seafood Seasoning on it, a squeeze of lemon, and on the grill it goes just like a steak.

I would recommend pieces no thicker than two inches (1 1/2" works well). Cook ten minutes for each inch of thickness or until done. Turn once midway through.

Sturgeon is nice and firm so you don't need to cook it in foil. Bon Apetit!

After skinning and removing the fat I sear the sturgeon on a pan. After it is seared bake it with some apricot marmalade. It is really good, sounds wierd I know but it is awesome.

Theres two ways we enjoy sturgy
Cut into steaks about 3/4in thick take mayo and cover lightly both sides{ mayo keeps fish very moist} Place on hot barbucue season with garlic and johnnys seasoning. Do not over cook will be like piece of rubber. Place couple pieces of alder or maple makes for better taste also

Another way we enjoy is to cut into 1in thick steaks put in steam bath until flacky season with sea salt and dill spices to serve on bed of white rice with holanday sauce all over the fish. Man we need spell checker for fishheads like me. good luck and enjoy

Okay, here's one I haven't seen here yet...Lightly batter 1 to 1 1/2 inch cubed stugeon in beer batter then coat well with parmesian cheese. Bake until done. Yum! Yum!
