Default blackened razor clams

has anybody tried to blacken razors like halibut, i talked to a guy that does it to salmon and i'm tired of the oil splatters from frying them. Anybody?

Razors are to delicate for blackened recipes I would suspect, unless shoe leather is a good meal

Try one of those large round screens in kitchen dept and use it as a vented lid....it catches alot of the splatters.

another tasty option is putting them on the bbq. large ones work best, just marinate in olive oil/salt/pepper then put them on a hot grill just long enough to get grill marks. original recipe called for butter/lemon/garlic dipping sauce, the couple times i made some it went unused........

I totally agree, that Razor are way to delicate to try and blacken. I love to eat Razors, and would stick to the traditional method of breading, and frying slowly until golden brown....

High protein/low fat foods like clams (squid and the like) are susceptible to high heat damage as the proteins will bind tightly and you get the shoe leather as mentioned above.

2 minutes (dry method) or 2 hours (wet method) is the general thought I use.

Take them outside on the patio/deck or even yard with an electric skillet. Lay down newspapers and use the aforementioned splatter screen. After frying, just pick up the newspaper and discard. No mess or clam smell in the kitchen (not that I mind the smell of fresh fried razors).
