This is the best I've found. It's great with fried razor clams and always gets compliments...

Tartar Sauce

2007, Ina Garten, All Rights Reserved
Prep Time:5 minInactive Prep Time:--Cook Time:--Level:EasyServes:3/4 cup

Ingredients
  • 1/2 cup good mayonnaise
  • 2 tablespoons small-diced pickles or cornichons
  • 1 tablespoon Champagne or white wine vinegar
  • 1 tablespoon capers
  • 1 teaspoon coarse-grained mustard
  • Pinch kosher salt
  • Pinch freshly ground black pepper
Directions

Place all the ingredients in a food processor or mini chopper fitted with a steel blade and pulse several times until the pickles are finely chopped and all the ingredients are well mixed but not pureed.

Don't forget the capers. They really give it that tarter taste.
Mayo
Capers
Pickles
Lemon Juice
Dill
Sea Salt
Make sure it's all finely minced, and you're golden. Good stuff
I can't eat the store bought stuff anymore after making it ourselves. Good luck!

If you like tartar sauce here ya go...
1 cup mayonaise
1 cup sour cream
3/4 cup finely chopped parsley
2 tablespoons super fine chopped onion
2 tablespoons Dill relish (sweet relish works but I prefer dill)
1 tablespoon lemon juice
salt and pepper to taste
Whisk it all together and refrigerate for an hour or so before you use it.
Enjoy, the best I've ever tryed.

I always make it fresh. Nothing measured, but start with about 1/2 cup mayonnaise

Best Foods mayo
Diced Pickles (home made of coarse!)
Lemon or Lime Juice
Onion powder
Garlic powder
Dill Weed
Cayenne powder (very little, you just want to tickle the taste buds)

Best if made up an hour or two before needed but you can use right away.

We used to make it with,
Mayo
Cornichons (sp) minced up
Capers minced
Boiled eggs small diced
chopped dill
minced shallot.
splash of sherry vinegar
Salt and Pepper to taste.

Don't have precise measurements but just wing it and add/subtract as you go. Good luck.
