Default cooking kokanee?

how do you guys feel is the best way to cook them? on the grill? in the oven?

Is there a wrong way to cook them?

That said the vast majority of my kokanee end up in the smoker. The finished product disappears quickly. Most end up eaten as snacks often with a favorite beverage - friends have been asking when I will be fishing them again (don't think they care what I'm fishing for but when will than smoked fish be available - this week!). Smoke kokanee are also the center of many of our fishing and hunting lunches - a tailgate lunch of smoked fish with crackers, cheese slices, apple slices and favorite beverage is pretty hard to beat and always popular.

Also like to make pasta dishes for dinner using boned smoked kokanee. For a quick meal for two I'll saute mushrooms and 1/2 of a Walla Walla onion in olive oil while the pasta cooks. Once the onions are cooked I add a can of mushroom soup and enough white wine to make a thick "sauce", season to taste and add the bone smoked fish (usually 3 fillets from from nice size fish) and a double handful of spinach leaves stirring until the spinach is cooked, add the pasta, stir and serve with the fresh veggie of the day, bread and favorite beverage -awesome.

I like to grill the larger fish on the bar-b-que. Usually I keep it pretty simple - sprinkle with brown sugar and lemon pepper and grill at 300 or so until just done.

For a special treat I sometimes top the fillet while it is cooking with a layer of fresh cracked crab and then a minute or two before the fillet is done top it with some of your favorite graded cheese. Serving that with a fresh salad from the garden, fried Yukon gold potatoes and Walla Walla onions (again fresh from the garden), a loaf of fresh french bread, a glass of white wine and for dessert a fresh baked pie using whatever seasonal fruit is available (again from my garden). For some reason the wife doesn't seem to mind my cooking-LOL.

Wow, there isnt a bad way to cook them!
1. Use a scrubber pad and descale them then dip in egg batter and fry them for breakfast.
2. Descale them and stuff the cavity with finely chopped onion and minced canned ortega chili then wrap in foil and bake either in the oven or on the grill.
3. Smoke them after soaking in your favorite brine (Tiffany Haugan's book smoke cooking salmon and steelhead)
4. Poached...
5. Grilled floating on a foil boat in butter, with lemon pepper and lemon juice
6. Fillet and de-skin dip in batter and deep fry
7. Fillet and de-skin lightly smoke then can for future use in salads, sandwiches while fishing for same, Alfredo sauce....

I could go on but as an established kokaholic I now need to call my support person....

Salmon cakes are a great way to use smoked and canned kokes for dinner. The leftovers are great in the lunch bag for the next days fishing trip. My favorite smoked Kokanee are the ones someone else makes and serves me with a cold beer or a good glass of wine.

My favorite recipe for cooking them is to fillet them and drop them on a broiler pan. I then sprinkle them with Paul Prudhommes magic salmon seasoning and throw them under the broiler for about 12 minutes depending on how thick the fillets are.

Don't eat them! They are full of horrible parasites that will destroy your stomach. Fortunately for you I have been approved by the State of Oregon as a certified kokanee disposal technician. PM me for the best time and place to drop off all kokes. Man you really dodged a bullet, glad I can help.

After preparing them several different ways my favorite is to fillet and either pan fry or grill on foil. Various rubs and seasonings and sometimes a marinade like Soyaki (Trader Joe's) does the trick for me. I rarely freeze them, they usually get eaten the day they are caught.

I usually fillet mine and cook on the BBQ on foil. A variety of seasoning will produce very fine results. I like soy sauce, lemon pepper and garlic. There are a few salmon rubs that I have tired and are also excellent. When kids are over for dinner I like to use brown sugar with a little salt.

Skin, season with garlic powder and onion powder and blacken in cast iron pan...
Fillet, season with johnys and lemon pepper and pan fry.
Grilled
Steamed with a vegetable meddle and rice.
and last and the most favorite.

Smoked in a salt and brown sugar brine!!! only other time I see fish disappear faster...personal water craft around making all kinds of noise.

The best way we have found and this works for springers as well. Fillet and place in large bag with terayki merinade overnight and grill. You will love it.

Try cooking them on a cedar board, Costco start selling them this time of year. I had some friend over for dinner last year and they were a big hit, the only thing I learned is don't invite friends over when cooking Kokanee on cedar boards you won't have enough for yourself. "Don't forget to soak the board in water for 1 hour before putting it on the BQ".
