A couple of easy low-fat "Diet" recipes
I've been in a "Biggest loser" competition since the first of the year and it's hard to find good recipes. I've found and adapted some to low fat-low cal and they're surprisingly good! 20 pounds down so far and about 15 to go!
Chicken and Beans (Chicken Chile)
2 boneless skinless chicken breasts diced
4-5 cloves of garlic diced
1 small onion diced
3 jalapenos diced
2 cans Fire Roasted tomatoes with garlic
1 can reduced sodium black beans - drained
1 can reduced sodium kidney beans - drained
1 can reduced sodium pinto beans - drained
Salt, Pepper, Cumin, Coriander, Chile Powder and Cayenne Pepper
Saute onions, garlic, and jalapenos in Pam or light cooking oil until tender.
Add chicken and season with listed seasonings. Once the chicken is done, add the canned goods and heat it through. Optional: Top with fat free sour cream and/or low fat grated cheese.
Creamy Chicken Enchiladas
2 boneless skinless chicken breasts diced
4-5 cloves of garlic diced
1 small onion diced
3 jalapenos diced
Salt, Pepper, Cumin, Coriander, Chile Powder and Cayenne Pepper
1 package reduced fat cream cheese
1 can reduced sodium black beans - drained
6 - 8 low fat tortillas
2 cans green chile enchilada sauce
1 bag low cal mexican grated cheese
Preheat oven to 350 degrees
Saute onions, garlic, and jalapenos in Pam or light cooking oil until tender.
Add chicken and season with listed seasonings. Once the chicken is done, add the black beans and the cream cheese. Heat until the beans are hot and the cream cheese has completely melted.
Spoon into tortillas and roll and place in a baking pan sprayed with Pam. Pour enchilada sauce evenly over the tortillas and cover with cheese. Bake for 30 minutes until heated through and the cheese is melted. Serve with fat free sour cream.
