Default Shy-Ann Meats...

I have taken my venison up to Shy Ann meats in Oregon City for a long time and they do up sausage and pepperoni very nicely with great flavor. This year I had them do up some jerky and it was pretty dry and very salty...I gave them another shot at the smoking thing and took some spring chinook up to them with some steelhead to be smoked and it came out really salty with very little smoked flavor, just not good at all...Anybody had this experience with them? Like I said, their sausage and pepperoni were top notch. I'll go back to smoking some of my own and taking the rest to Allick's sausage kitchen on Mcloughlin. I'm not flaming Shy Ann's, they'll still get my biz on the sausage and pepperoni but the smoked meat goes to the sausage kitchen. Doing it myself is always best but I don't have the time very often anymore...Sure is nice to drop it off and pick it up later...

Yup, took some elk and venison in for jerky and it turned out like crap...kinda spendy also. Maybe they just need to be edumacated on the fine art of jerky making.

I can understand where your coming from. I took my deer to shy ann meats and had the same problem. My brother in law took his to Allick's sausage kitchen and as far as the smoked meat it turned out much better. :smile:

Since my hunting year was successful I chose to find a new meat processor to do some sausage and pepperoni for me. I did allot of calling around and found that Shi-Ann Meats had the best price as well as flavor selections around the local area. They did summer sausage, links and pepperoni for me and it turned out beautifully and I am very saticfied. Thanks for the heads-up on their smoking process, I'll be sure and do some more looking around if I need that done in the future. They will however get my repeat business on the sausage products.
