Default Tangy Springer

My family has not usually been very fond of the fish I bring home, until now.

Here is what I've been doing for years, but it seems the wife and kids have just now discovered how good it is.

Mix up a lemon mayonnaise sauce, drizzel over fish, cover with lemon pepper and lawry's seasoning salt and cook til done.

1/2 springer (fillet)
1 Tablespoon Lemon juice
5-8 Tablespoon mayonnaise
tsp lemon pepper
tsp lawry's seasoning salt

I wash off the fish, then pat the meat dry with a paper towel.
cover the fillet with the mayo sauce and then sprinkle the lemon pepper and seasoning salt so that each bite will have some of everything. Tonight I had to replace lemon pepper with Old Bay (cause we ran out of lemon pepper) and it was fantastic. Meat below was a side of a 14 lb springer and fillet was about 1 1/4" thick. Cooked at 350 for about 25 mins (we like it done and a bit drier than most recommend). Can't beat Springer, but I use this recipe for Steelhead and all seasons of salmon, in the oven and on the barby. My kids don't even like mayo, but they scarf this stuff down.

Looks great. I make mine very similar but mix Dill Weed spice into the Mayo and then cover the top with a layer of grated Parmesan cheese.

Ummmm, sounds like a great recipe, I hope my luck changes for the better and I catch a Springer, I'll give it a try. Thanks
