Smelt Recipes
The good old standby of floured and fried in a hot cast iron pan is great but there must be other recipes or variations of this one??

i have some smelt that i want to smoke. I had some friends long ago that used to smoke smelt and they were very good and i was wondering if anyone out there smokes them and a recipe would be nice to.

BigTule, my uncle used to smoke them all the time. Would usually smoke then until they were fairly crispy. He just used the soy sauce, brown sugar, salt, pepper, vinegar, garlic recipe. If you are not aware of this one email me and i will send it to you.

I fried about a dozen smelt for the family tonight. They looked good, but were kind of mushy. I ate 4, the rest of the family (wife & 3 kids) pushed another 4 around their plates and we fed 4 to the dog. She really likes em.
I asked the family if they wanted me to smoke some and they said..........no.
I think they taste best after they have been eaten by a sturgeon!

2 cups brown sugar
1 cup salt
mix salt and sugar together
layer fish then brine fish then brine until all gone brine does not have to be very thick this is a dry brine but after 1 hour will be real juicey
Let brine for 10-12 hrs mixing every couple hours so the brown sugar doesnt all stick to the bottom. After brining rinse off lightly. Then use little pieces of wire and hang each smelt by the tale.Allow smoker to heat up and start smoking then smoke for 8-10 hrs Usually about 5-6 pan in my big chief smoker. Heres one from back east...throw in egg...then put in bag with salt ..pepper and flour..then fry. Next watch eyes roll back into your head when you take a bite....HEHEHE

The Ultimate Smelt Recipe!!
Ingredients:
1 6/0 hook inserted behind the head
2' 80 lb Power Power Pro
2 half hitches
4oz of lead or more depending on preference
Mix ingredients gently with the water and sand until your rod starts to thump...try to remove rod and reel the line in...I am not sure how the next step works, but they turn into Sturgeon.

I am smoking some as I type this and will post the results this evening. I used the reciepe out of the Little Chief smoker book.
Little Chief Smokey Smelt
1 cup salt
1 cup brown sugar
1 cup soy sauce
1/2 cider vinegar
1 tbsp Worcestershire
1 tbsp paprika
1 tbsp chili powder
1 tbsp garlic salt
1/2 tsp pepper
3 cups warm water
smoke whole or with head and entrails removed
3 pans of chips
smoke 5-7 hours

When I lived in Minnesota they would have fund raiser smelt fryes. Kind of like when they have pancake feeds here. BEER BATTER!with plenty of cold ones. I miss those days. I haven't smelted since I was a kid. Sure would like to again. :grin:

Lets see....
You take 6 to 8 whole smelt and puit it in your blender and put in some ice cream and Kahlua and pulse until smooth . Sure takes the edge off Saturday night Crab Feeds :grin: :grin: (JK). I go with the Pilar and Jim. Smelt good Sturgeon Bait anyone going Thurdsay or Friday? Please let me know if you want company. Thanks Tom

I like the exchange Idea of Pilars. Jim's recipe would also be another wise choice. If you can't trade up for a larger fish then I'd sell them....aren't they going for precious metal prices these days?
