Go pick up a big chief or little chief smoker. Do it yourself. You will get a better product. Start with the "Smoked Salmon Deluxe" recipe in the instructions and you can customize as you wish. Do a search for brine recipes. There has been plenty of discussion on this. The only problem is that your neighbors get to recognize the smell when the smoker is going and tend to hang around for samples.
