Default Jerky

Does anyone have a good simple duck/goose jerky recipe. I've been craving some and want to do some up.

yeah I make some when I get the chance.

I usually start off by slicing the meat up and soaking in salt water overnight to draw some of the blood out.

I just kinda wing it when I make it. But I like to use Teriyaki sauce and brown sugar and if you like spicey then I would put some chili flake in too. But basically I just use a variety of spices and whisk them up together and make sure that the meat is submerged completly in the marinade. To do that I just put some plastic wrap directly on top of the jeky and kinda just push it down a little. I like to marinate atleast 12 hours too. And I like to let them air dry on the smoker racks before I put in smoker.

2 pans of chips should do the job. But you could use 3. I really don't follow the rules when smoking as far as how many pans of chips to use. As for the kind of chips you could use apple or cherry or whatever you like. Maybe try doing the chunk style chips. Hopefully this gets you started.

Hi mountain jerky mix. Just cut your meat up and follow the directions. Leave it set in the fridge for 2-3 days and put it in the smoker. Pepper or pepper and garlic blend is are the best.
