Hope this helps. It's how we make it, and turns out really good! Kind of a sweet/spicy chili. You can always 1/2 the spicy stuff to tame the taste down. It makes enough to feed 8-10 people.

1 small can tomato paste
1 can tomato sauce
1 Large can vegetable juice
1 Small can Tomato Juice
2 cans diced tomatoes
1 can black beans (drained)
1 can red kidney beans (drained)
1 lbs ground venison or elk
2 lbs venison or elk roast steaks cubed
1 green bell pepper
1 red bell pepper
1 orange bell pepper
1 sweet yellow onion
4 Tablespoons chili powder
1 Tablespoon cayenne pepper (2 Tablespoons if you like more heat)
½ Tablespoon red pepper flakes (1 Tablespoon total if you like more heat)
2 Tablespoons minced garlic
1 cup brown sugar

Season cubed venison/elk and ground venison/elk with black pepper and garlic salt. Brown the cubed venison/elk in a skillet and drain. Brown the ground venison/elk in a skillet and drain. Dice the onion and chop the peppers. Put tomato paste, tomato sauce, tomato juice, vegetable juice, and diced tomatoes in the pot, and then add everything else, EXCEPT the brown sugar (meat, beans [drain before adding], onions, peppers, garlic, spices). Stir everything together and mix well. Slowly bring to a boil, then turn heat down and simmer for 1 hr, stirring occasionally. After 1 hr, add the brown sugar and stir it in well. Simmer & stir occasionally for another 15 minutes, and then remove from heat and serve. (Better if made the day before and it sits in the fridge overnight)

Thanks I will be in a chili cook off last year I took 1 place Ill have to try it at home first one of the rules is no beans real chili has no beans. So is there a sub for the bean?

You mean real TEXAS-STYLE chili has no beans...

Not sure what you can sub for it, as I never thought about it. I like beans in my chili.

I suggest you play with and doctor that recipe a little if you're going to enter it in a chili cook-off. That's a good mild, homemade recipe for the family, but i'd kick it up a notch or two and do it different if I was entering it in a contest. My wife hates hot stuff, so I have to tame it down a LOT...

Jokesters recipe sounds pretty good. And I'm a chili master
One thing I would add is a can or two of sweet corn. I like beer in my chili and or bourbon. Just cook it longer to cook off alcohol. Porters or stouts are my favorite. They have a more complex flavor. Just some suggestions.
