Lomi Lomi salmon is a salad of salted cured Salmon, fresh tomotoes, onion, and perhpas some red pepper flakes. I've also seem it made with cucumber but that's less common.
The salt salmon is hard to find but pretty easy to make. Just take a salmon filet and coat each side with kosher salt. Don't use iodized table salt. It will take about six ounces for a typical filet. You can add up to equal parts sugar if you like it a little sweet, but Lomi would be best with no sugar. Once each side of the filet is coated with the salt place it in the frig for 24 hours. A little weight on top of the filet will help remove moisture. Notice that enough water will come out that the salt seem to disappear in the liquid. Remove and wash under cold water to get rid of the salt. It's now ready for your Lomi.
