Just thought I would share my favorite Steelhead dish!

Blackened Steelhead

-First of all you need to catch some nice fresh Steelhead!

-Secondly make a trip down to your local Safeway and pick you up some Paul Prudhomme’s blackened red fish spice!

-Cut the fish in to serving size morsels.
-Melt about a half a cube of butter, and smother both sides!
-Generously sprinkle Paul Prudhomme’s blackened red fish seasoning on both sides.
-Slap your fish down on a VERY HOT skillet for about 2 min then turn over.
-Transfer to a serving dish , and add more melted butter if desired!

Don’t be scared of the smoke! Its best served piping hot!

Yeah, about that smoke. I tried a blackened recipe some years ago. That smoke carries all the same spicy stuff up in it. Put that vent hood over the stove on high or wear goggles. That smoke really hurts.

Sounds good, I love blackened redfish.

A good solution to the house full of smoke is an outside burner(like the ones you see for the turkey cookers). Keep your pets and small children safe and have a cajun feast.

Sitting at a nice little outdoor food stall after a run in the jungle, a gentle breeze carries the smells of the food cooking a few feet away past our noses. BHAM! The cook threw a couple pounds of padas (HOT!!!) chilies into boiling palm oil. The capsicum in the air litterally knocked me out of my chair. :shocked:
Anyhow, the recipe sounds great. I know where Safeway is, could you please tell me where to catch some nice fresh steelhead. :grin:
