Default FishingChefs Recipe of the week

Hi Folks,
Next to having a good product to like wild Oregon fish.
Seasoning is the next big step in cooking no matter what your method will be.

Sprinkle this on both sides of your fish prior to cooking it.


Fish seasoning salt


Ingredients

1. 1C coarse salt (Kosher or Sea salt)
2. 1/3 c Lemon pepper
3. 1 T white pepper
4. 1 T lemon thyme
5. 1 T granulated garlic
6. 1 T sugar
7. 1 tsp cayenne pepper
You can also add 2 tsp of dill and or 2 tsp onion powder.
You can also add this to flour for a seasoned flour.


1. Combine all ingredients in a stainless steel bowl. Start with the salt then add the other spices and the sugar. Mix very thoroughly.
2. Use a funnel to pour the season salt into empty spice/seasoning containers with shaker tops.
3. Remember to label this as fish salt.

fishingchef, Sounds wonderful!

Granulated garlic, one of my favorite and most used seasonings. A person can get granulated garlic, lemon pepper, chili powder and other spices real cheap in the big bottles from Costco.

Limbos next to Trader Joes on 39th has bulk spices you can buy per the oz. You can save lots of $$$$ that way.

Hey Keta what do you like?
Tuna in general is an oily fish.
This seasoning great for that if you are searing or grilling.
Do you have any diet restrictions?
Do you like your fish proper or well done?
Spicey or mellow?

Hey Spool sounds like you live near my house.
You are correct on the money issue. Also if you buy in large bulk but don't use them fast the flavor breaks down.

Don't ever buy spices online if you can help it. You just never know what you will get tell you open it.

I love Cayenne pepper on just about anything and the smokiness I bet takes the sharp edge off the white pepper, which I also adore, especially in combination with dill. Thanks for the suggestion, fishinchef. You aren't scandinavian, are you?

If you like smokey flavor
Try making smoked salt.
Just place your Coarse salt in a perfarated pie tin( you poke the holes yourself).

When you smoke your catch place the pie tin with salt above your catch in the smoker.
This will give the salt a good smokey flavor. This is always good for grilled items of any kind.

FC,
The doctor said I could eat anything. If it bothers me don't eat it. I generaly eat tuna raw or seared. I also do tuna "fish kabobs".
