New Food Product

Anyone have any knowledge on how a person would go about getting a new food product in the market place? I have a product I would really like to market and think by the response I've had so far would go over real well. Just don't know how or where to start.It is a fish product. I suspect you might want to investigate a PATENT so the rest of us don't steal your idea.
