Leftover Bass - Try This - OMG is it Good
What can I do with leftover bass filets?
Well, I answered my own question. And are they good. This made 6 patties about the size of a good hamburger patty.
Ingredients:
1 - lb of white fish cooked and flaked.
1 - red bell pepper, diced
4 - green onions, sliced
1 - teaspoon Old Bay seasoning
1/2 - teaspoon salt
1/2 - teaspoon black pepper
2 - eggs, beaten
1 - cup bread crumbs
2 - tablespoons olive oil
Directions:
In a medium bowl, combine fish, pepper, onions, seasonings and eggs. Place bread crumbs in a shallow dish. Heat oil in a large skillet over medium heat. Form fish mixture into patires using 1/2 cup for each. Dredge in bread crumbs. Place in skillet and cook 5-6 minutes until golden brown, turning once.
The patties were too crumbly so I mixed the bread crumbs into the mixture before cooking. The other thing was that the bass I used had been fried in Pride of the West seasoning the night before. I'm sure that this added to the flavor as well. Did I mention that it was good?
