Blah, never again. Tried it against my better judgement. I took microbiology in college, I knew better. I still have to put up with shooters and barbecued every time we get together with friends at the beach. They start the kids when they are old enough to hold the shell. Bushels of oysters and kids from 2 to 75 eating them and I'm hiding in the corner munching my crab.

I like them from the ******'s restaurant best. They put them in a shooter glass with some cocktail sauce, tabascoo, and beer. Very good.

Had 'em once! Made me feel like a manly man...or it might have been the six-pack the preceded them. First one went down smooth...schlurpp chew chew swallow. I'll say on the second one (after two more beers) that I'm glad the other couple with us was looking the other way 'cause I got it half way down and...(insert gag sound here). I'll do them again sometime, if I'm in the proper mood. I will not do oyster shooters and drive though!

I lived in Tukwilla Wa and not far away was an asian market who sold them from tanks..wish I knew where they got them because they were the best. (and cheap!)
My favorites have been Winchester bay oyster co (not sure they still exsist?) Netarts bay oysters are great when fresh, and yaquinna bay oysters are a close third.
The colder the water, the better the shooter. Petites and extra smalls for shoots...smalls and meds for BBQ. I prefer horseraddish over tobasco.
I cant say enough about them...good eats!
BBQ on a cookie sheet, mix a cheap beer with tobasco, garlic, onion powder...pour the mixture over the oysters and allow them to steam with the lid closed on high heat until they are barely opened. dip in garlic butter and/or cocktail sauce with lots of horseraddish ~Yum

Worlds best oysters, Stew, bar none can be had in the panhandle of Florida near Panama City in the Appalachicola bay. They are real small and very tasty. No sauce or tabasco required. Yearlings from Willapa bay are pretty dang good too. Jakes restaurant, downtown has a great selection (but $$$) and Uwajimaya in Beaverton has quite a few different varieties at a decent price.
The months with 'R' thing applies in bays where it is warm enough for them to spawn. Around here that means Hood's canal and maybe Willipa bay.
The months that do not end in 'R' are summer. This is when oysters spawn. The shellfish are in poor condition and not fit to eat in this condition. We farm almost all oysters in Oregon bays. The empty shells are sacked all year and left on the bank of Hood's canal just above the low water mark in August for the whole month. This allows the natural spawned baby oysters to settle out of the plankton and stick to the sacked shells.
These shells are then brought back to the bays and set on beds.
The native oysters that were fished out of existence are no longer in our bays in any numbers.
In Oregon all oysters are private property and may not be harvested.

I once got a ticket for exceeding my limit on a Hood Canal beach. You have to shuck them on the beach and return the shells to the same place and tide level as you found them. I was eating one oyster for every one I put in my container. When I was full and my container held a leagal limit I headed for the truck. I was greeted by Officer Sneed upon arrival. He asked me how may oysters I had and I graciously replied "a legal limit....18". He counted them and then informed me that any oysters consumed also counted against your limit. DOH!!! He had been watching me the whole time. He said he would have over looked a few but one limit in a dish and one limit in the belly was going to far. I got a ticket for 18 oysters over my limit. They cost me 8 dollars each. Pretty spendy smorgasbord! [img]graemlins/dork.gif[/img]

I took Microbiology in college and realized you can't escape the tiny organisms no matter what you do. My wife now loves 'em, the more expensive the better.

I ordered 2 bushels (16 dozen) of oysters for the jetty fishing trip from T&S oyster, who has about 75 acres of oysters in netarts. I think Todd told me last year he figured he had 4 million oysters in the bay. :shocked: :shocked: :shocked:
I really love oysters on the bbq with a little butter, not sure why you would suck them down raw when you could cook and enjoy them  Looking forward to eating plenty of oysters on the 12th.

There is not a bad way to eat an Oyster. Raw is about the best. pretty close with BBQ'd though. Making me hungry :smile:
