Default OK guys

Attempting my first smoked trout i brine it for the required time, now im letting them air dry for 30 mins then i will put them in the smoker im at the mercy of you guys i have Alder or Hickory what shall i use??!?!

I like to cut the skin down the back before brining,and go easy on the salt for trout.Your doing fine! Alder

I fillet all my trout and deboned as best as i could i got about 1hr 30 mins left used alder and keeping my fingers crossed...

Well here it is all done family loves them even made some smoked trout spread with cream cheese to put on some ritz crackers... The process

The Bounty


Prepping the fish


Now fish is in the brine went into the fridge till completion


Brine is finished letting air dry for 30 mins i patted them dry.


Ready my first pan of chips what a great smell when you open the bag.. i pre heated the Big Chief 15min into the air dry


Smoker racks have been loaded first pan of chips go in...


And the finished product "stove is meesy Cooked itlain food that night lol" anyways it was great wife and kid love it i like it maybe a little to salty for me but the smoke flavoring is great ill figure out a way to kick the salt down a notch just thought i would share....

Looks like you did a good job. The fun in smoking is the practice...trying little variations until you get it just the way you like it. Enjoy!
