Salsa Verde!
For those of you who like an all-around great sauce, give this a try:
Salsa Verde
- 6-8 medium tomatillos
- 1 medium-large white onion
- 2-4 jalapenos (2= mild 3=medium 4=just right!)
- 1 bushel of fresh cilantro
- 6 cloves of garlic
- 2-3 tbsp of salt (yes, tablespoons)
In a large pot, boil tomatillos (without shells), onion (halved), and jalapenos until the tomatillos are milky green. Strain and place in a blender, add garlic (peeled), and blend until smooth.
Add 1 tbsp of salt and blend.
Taste.
If it needs more salt, add accordingly, and blend. Repeat until you get the saltiness you like.
Once all your salt is there, add your cilantro (washed and trimmed), and blend.
Chill salsa in the refrigerator!
Originally for Mexican chicken tacos, but goes great with beef, pork, lamb, or fish. Great sauce on grilled salmon, even!
