Chicken fry it! We do it all the time with venison. Cut into 1" wide x 4" long strips. Make a coating using flour, garlic salt, black pepper, garlic powder, cayenne pepper, and onion powder and mix it up good. Dip strips in four mixture and coat both sides. Put 1/2" of vegetable oil (or whatever oil you want), and heat it in a skillet. Place your floured elk strips in for 5-7 mins, and flip 'em. Cook 3-4 minutes on that side, and remove! Try not to eat 'em before you cook all of them...I dare ya
You could also cut the steaks into chunks and make elk fajitas with some onions and peppers.

1 can of cream of schroom, 1 can of french onion soup, 2 cans of water. Simmer till meat just about comes apart and dump meat and soupy gravy over egg noodles or mashed taters. Works good for wild gobblers too.

Re: elk steak! What to do?
Give it a quick bath(30-60min) in Worchestershire and or Soy Sauce. Cut in 3/8" thick steaks. Fry or BBQ hot and fast. Medium Rare is as much as you want to cook it. Not a great recipe for old bulls or tough cuts but for steak cuts it's great.

Plus a little sesame oil, sesame seeds, brown sugar, fresh garlic and pepper. "BBQ ONLY" or the sugar will burn. Lower temps required for the sugar that is in the mix soooo...... Medium heat for me until medium rare-medium! Excellent!

Re: elk steak! What to do?
Use tenderloins or back straps for this. In a glass baking dish, add a layer of sliced onion, now a layer of sliced apple, now a layer of bacon strips, now the steaks, another layer each of bacon, apple and onion. Add 1/2 cup of water. Put a lid on it and bake it @375 for an hour or so.

If it's good, make schnitzel. Pound it out with with a mallet, flour->egg>bread crumb, and pan fry briefly. Great if you harvested a tender one.

Re: elk steak! What to do?
Personally we don't like to pollute our elk steak.....sprinkle w/ a little Montreal seasoning, sear each side in a little olive oil, spank it a couple times to check firmness and then serve while still bleeding.
Fajita's???? OMG, what a waste....that's what ducks are for!
But I'll bet elk fajitas are YUMMMMY!
For what it's worth I did the chicken fried thing w/ teriaki marinaded duck using instant potato's instead of flour and WOW. Kids gobbled it right up. SO if it'll make duck good, I can only imagine how tastey elk would be. Oh, boy my mouth is watering just thinking about it.
When I butcher I pack up elk tidbits and such, you know the good steak/roast meat you can't cut anything out of....and would pack them in quart bags for later use as jerky meat. Well they never made it to jerky but rather were used as stirfry meat.
Suppose you could cut up steaks for stirfry...but again seems a waste.

Re: elk steak! What to do?
If it is not cut already Marinate in yoshida wasabi sauce and BBQ. i quite cutting into stakes and leave in chunks gives more options you can still do this if the meat is already cut but be careful not to dry it out

Re: elk steak! What to do?
In a gallon size baggy add 1/4c soy, 1/4 cup oil, 1 crushed clove of garlic and 2tbs brown sugar. Toss your steak in that for 15min and throw it on the grill and treat it like any good steak( med rare).

Re: elk steak! What to do?
haha, I would've bet that the #2 post was gonna be 'give 'em to me'! Lots of good ideas here, and remember, red meat is red meat; whatever you do with beef you can do with Elk, you just get better results
my , maybe cut it thin into 'breakfast steak' and season with sage, molasses or brown sugar, garlic, pepper, bacon or hickory salt, maybe some mustard, maybe a little red pepper sauce; anything you can think of to make it 'sausagey' tasting.
Once you get over thinking of Elk steak as the Holy Grail, start experimenting and you'll have more fun (you'll make more 'dog food' also, but don't worry, you'll get another one....right?).

Re: elk steak! What to do?
If you like a little spiciness to your food I would strongly recommend marinating it for 24-36 hours (36 is better for heat) in Stubb's Beef Marinade, make sure to flip it over several times per day. Then simply sear it on the BBQ to lock the juices in and cook until done. We all know how elk comes out overcooked, so be careful! Slice it into strips, or however you want, and serve. I have converted many non elk/venison eaters into lovers of elk steaks in a matter of seconds with this simple recipe.
