The main way to tell is the same on steelhead, salmon, and adult trout. The male has a longer, more pointy snout, the female has a snubbier, more rounded snout. Some bucks are way obvious as are some hens, and others are a little tougher at a glance.
Also, steelhead bucks tend to get darker red (or sooner anyways) and the red takes up more space on the side. I don't know about the color differences between the male and female salmon, but the snout works on all of 'em.
