Default Asian TUNA! Salad

Another thread on TUNA! salad got me to thinking about how to put a new spin on this old favorite.

Here's a super healthy recipe I came up with last night:

1-2 pint jars of TUNA! (1 if you like a high "stuff" to TUNA! ratio)
1/2 can water chestnuts, diced
2 stalks celery, finely chopped
1 teaspoon cilantro, finely chopped
1 tablespoon fresh ginger + 2 cloves garlic, grated (or run through a food processor)
1/2 onion, minced
1/2 teaspoon sesame oil
juice of 1/2 lemon
Mayo to bind (we use smart beat low cal mayo)

Thoroughly combine all ingredients except TUNA! and mayo. Add TUNA! and mix to desired consistency. Add enough mayo to bind. Chill at least 1 hour before serving.

*Chilling is very key to this recipe*

Add salt to taste (AFTER chilling to combine flavors)

Serve on toasted english muffin, as a topping to green salad or just eat it straight out of the bowl!
