Interesting way to "hang" a deer
Okay, I know this is going to have an element of humor in it but it worked out well enough for me that I will use it whenever practical. For me, that's when it's a smaller local deer (big doe in this case) and I removed the head for ODFW. Makes it real easy if you want to wash it out. In my case, I have a private enough driveway I don't have to worry about getting laughed at or hearing mortified screams from the neighbors.  I haven't started butchering it yet but I expect to be easily able to cut off all the quaters, backstraps, loins, etc. until I am left with just a bare rib cage.
So you can either laugh at the "chicken rancher" of it all or learn a useful technique, I'm okay with either!

Well, it's sort of a by product of using a power vehicle to pull the hide off a carcass (there have been some threads on this), commonly known as "bumper skinning" since you often tie a rope to the bumper of a truck. I always use this method (if it's an option, can't do it if you're packing it out) since it produces the best results (no accidental cuts into the meat) and is darn quick.

I like the idea, but I'd be concerned the dolly would fall over and dump the deer on the ground. You sure wouldnt want to get too agressive with it cutting off chunks. It would roll right into the cooler though.

Thats what I was thinking. I was wondering about that skinning method. Do you ever pull chunks of meat off? Also, does it matter how freshly killed your animal is (meaning, if it has cooled does it not work as well)?

In regards to the amount of fat, very typical for a black tail, if not a bit more, at least for the ones I usually take.
Using the bumper method does indeed put less hair on the hide and it tends to make a much "cleaner" pull, less meat. It can separate the outer part of the hams a bit but not enough to worry about.
I just cut the deer up tonight, having it on the hand truck really helped stabilize it. I'll definitely use this method whenever practical.

From my experiences, it works better if the animal has been dead for a short time (within an hour or two). When they cool, it still works, but you have to watch closely, so you don't end up pulling off chunks of meat.

To answer an earlier question, I've always done this method within 4 hours or so of the kill, never had a problem with that. In regards to pre-skinning, I always tie the head, cut the hide all the way up the front, around the top of the neck and inside the front legs. Pull down the back enough to tie around a golf ball or small rock. Make sure and use good rope. Don't try this if the animal has been shot through the neck (bones) or maybe even the back. It'll likely snap in half. Also, the deer need not be handing vertically to begin with, you can tie the head off to a good stump or tree but then it's best to have a tarp under the carcass.
