Default How to make Duck/Goose chilli????

Hey guys and gals,
I have quite a bit of duck and goose meat from the season and have been looking at some of the options for cooking it up. I really don't like the taste of the bird and would like to try any recipes that will cover it up! I tried cooking it in the crock pot in bbq sauce and mades pulled goose, although decent, it wasn't that great. Any ideas on other favorites to completely lose the flavor? CHilli would be a good one, any good recipes? thanks a million, Ben

I kill it because I do eat it. I do not like the gamey taste of duck when I have cooked it before so I generally have pepperoni made or will smoke the meat and make jerky. Before you assume that it is going to waste think about it and realize that I am just trying to find other recipes that take some of the gaminess away. its not being wasted either way.

It makes sense to use the same recipe you would use for regular chili. Just substitute the Duck/goose meat in place of the other meat. Chili recipes vary all over the place and there are hundreds of them out there. It just depends on your taste buds as what you like. Nearly all the grocery stores sell chili spices all ready to go. [with directions]

What's wrong with wanting to remove/cover up the gaminess of the quarry? I know many people that don't like eating fish, but they still fish. They either return it to the water or keep it and give it to their friends. So I see no reason to flame a guy that loves to hunt but does not like the flavor he was just looking for some suggestions .

Because to many people kill just because it is fun and let things go to waste. Duck and goose is really good, no need to hide the taste.
I'm sorry for flaming the guy, but the girl friend was talking to her friend in Idaho and her Husband flopped 5 steelhead on the ground and headed back to the river for more. Dogs drug three of them off. WASTE ****** me off.

Thanks for the apology and it is accepted. I waste nothing. I shoot what I can and it all gets cleaned and either prepared or given away. I love waterfowl hunting, fishing, deer. elk, antelope, upland, turkey, anything that I can hunt I will and do. It gets cut up when I get home and frozen or cooked fresh. I just have had soem abd experiences with cooking duck and goose and really didn't like the flavor and was hoping for some other ideas. Fortunately, thanks to a good buddy I just ground up several pounds of goose meat for the upcoming chilli, hamburger helper, spaghetti etc. Its all going to good use and the rest will be experimented with and eaten. Also Hunterxtreme, thanks for the chilli idea, I think I will go out and buy it and see if its as good as you say!!!!!
