Default elk meat!!! mmm

just wanted to let everyone know i just had some of the best elk meat ever ( and i live on wild game...) marinaded three days in pepercorn steak marinade, side of fried potatoes, and carrots wow amazing!!! roomate just got home and tried some and didnt believe it was elk he though i was playin a joke on him haha. anyways thats all... guess this makes all the hard work worth while!!!you all know providing for the fam isnt an easy chore haha......

Very nice! My roommate just shot a big old bull about 2 weeks ago in MT, and we cut the tenderloins out and ate them that night. Tenderloins don't need to be marinated I don't think, but we marinated these in this stuff called Caribbean Jerk, and it turned out sooo good. I can't imagine what the tenderloins from a fat spike or cow taste like.

I trade my neighbor sturgeon for elk. As I was backing out of my driveway at 10:50 this morning to take the dog to the vet, he comes across the street with two packages of elk. Dang, what a neighbor?...

NOOOOOOO.......don't say that! I LIVE for heart/liver smothered in walla walla sweet onions!
Of course it can't be more than 1-2day old though. And cooked over a tent stove.

We had blacktail steak for dinner last. And duck fajita's over the weekend. Yummy stuff.
Hopefully we're having bass for dinner tonight, or maybe halibut......or grilled tuna.

Oh the antis should hear you guys. You're not hunters; you're gourmet eaters!

I'm defrosting a 30lb. bag of odds and ends for stew meat retrieval for my lovely Mother in-law. She loves gourmet wild game. Oh and I have to remember to package some to send to her brother. Hunting for two families is hard. What tag to put in for, hmmmmm?
Edit; I like the Carribean Jerk spice but today I found a new fav.// the series;;;Temporary Insanety Just a teaspoon in the frying oil. Whew it is insane hot...

Elk Filets wrapped in bacon, seared in skillet finished in the oven to just past med rare to med side.

We make a basalmic vinegar/black peppercorn brown gravy out of the pan drippings!!

Very good!!! I have had people who didn't know it was elk think it was the best filet migon they had ever had!!

I had Elk Tritip this morning...

1. Cut thin strips 1/4 inch, beat with meat tenderizer.
2. Dip in egg, then blended saltine crackers with a hint of Johnny seasoning salt.
3. Cook in light olive oil on stove....

Best Elk fried steak a guy can make....

Tonight we're eating one of our last 4 pieces of Spring Chinook cooked on the traeger with a thin pasting of Soy Vay Hoisen Garlic Sauce, if you haven't had it it's the best way I've ever eaten Salmon.... Guaranteed, the Soy Vay Hoisen Garlic Sauce will change your cooking life with fish, chicken or any red meats....

I spent Sunday doodling around with my new grinder/stuffer that I got for Christmas. Still have some elk trim from one of my bulls I hadn't processed.

My wife and I read and tried our way through our first effort at making elk sausage (beer weenie type). Came out great. Put 6 hours of smoke on it.

It is the best elk sausage I have ever had.

Just had some more for dinner.

I am gonna do the rest of that trim up the same way.

I've earned my dislike of liver and onions honestly. Mom always served to cooked to death, and had sides like lima beans to go with it. Ugh. Then in college in true broke, starving college student fashion my roommate and I would have liver once or twice a week, I think it was about 30 cents a pound. One night, after much A-1 sauce on the liver we decided we were not THAT broke. Don't think I've eaten it since. The insides get left for the coyotes and magpies!
