Default Experimental duck receipe....

I did a duck concoction (SP) tonight that turned out great thought i would pass it on.

I brined six duck breast in the following for about 5-7 hours in zip lock bag.
1/2 to 3/4 cup kosher salt over duck breast along with pepper and rub
squeeze juice of 2 orange and throw left over orange in bag.
Add choice of hot sauce gernerously into bag and throw breast in.
Huck into fridge at this point.

Time to cook.
Rince duck breast and discard brine
cook about 8 pieces of bacon in pan until crisp and set aside reserving the bacon greese. chopped two large onions and cooked in bacon greese unitl almost soft and remove from skillet.

Combine flour pepper and salt and dredge duck breast. Brown each side in skillet that onion was in along with left over bacon grease. Once browned I put the onion and bacon over the breast and put about a cup of Orange Marmalade preserve and a cup of red wine.... I mixed the wine and marmalade together to incorporate them.

I covered and simmered for about 15 minutes but will cut that back maybed 10-12 minutes next time. turned out really good.......

Also soaked five duck legs, yes only five, in a garlic roasted red pepper dressing I got at the store. Some organic stuff for about five hours. Then wrapped with bacon and cooked on the grill till done. I was concerned about the flavors but they were great.......
