Default Tuna Tummies

I pulled out the wrong pack as I was heading up to deer hunt and ended up with a bunch of bellies that I was going to smoke. Put the wasabi and soy sause on 'em and they were better than the loins I even got my hunting partners to eat some :shocked: What a mistake :depressed: I should've brought more.

Couldn't agree more Keta & Chaps. It just baffles me to see so much belly meat go into the dumpsters.

As noted before, we've been gutting those special personal fish on the boat, after about a 10 minute bleed, then packing the bellies with ice. Not only does this chill the core much quicker, but it makes for very mess-free (like no stray bile) loining, and the belly meat comes out as clean as can be. A little work with the fillet knife to remove the membrane-stuff but oh what beautiful, oily flakes are beneath.

Maybe next year we have a special belly-meat promotion event potluck.

A commercial fisherman I know who does this for a living says the bellies of salmon are alsothe best for smoking.

I save all the salmon bellies and smoke them. Doing some salmon smoking this weekend in fact.

When I give away river salmon to friends and family, I always keep the bellies for smokin!
