My way:

Cut sturgeon (can use sea bass) into 1 inch cubes

Bring salted, seasoned water (I add garlic/lemon juice/dash cayenne) to a boil

Add cubes of sturgeon

When they float to the top, they are finished...drain on paper towels

Dip in garlic butter...YUM!

Basically the same as mine, but I use Sprite. Coctail sauce is another good dip for this. Yummy.

Sorta how I do it.
I cut in slices 1/4 inch thick.
2 qts water.2 cups sugar. 1 cup salt.
Slowly bring to boil.Dissolving most of the condiments.

Everything else is the same.

Smoked canned sturgeon is excellent. Deep fried is also very good. For me poor mans lobster is more about sauce than the fish. I just don't think the fish is all that good boiled.

dip in a melted butter / lemon juice mix...mmmmgood! Remember, when the 1/4 chunks float, they're done.

Saw a recipe online that says you can do the same thing for trout.

...Maybe an idea for those planter trout with white meat that don't taste very good. Kind of why I got away from trout fishing. Like the pink meat on those Deschutes trout though!

I had reservations, not the thing you do when you have to stay out of town at a hotel for a couple nights or the places where many native Americans reside, but more like bad feelings about trying to make a fish taste like a lobster and maybe end up ruining a perfectly good bottle of 7Up.

By yimminy, it actually works okay. Have some melted butter ready, boil the 7Up, drop in the chunks, fire up your imagination and you are good to go.

Just tried the 7up with shrimp and I thought it came out great. The 7up cut down the fishey taste, resulted in a great texture, and with the garlic butter tasted great. I'm partial to deep fried (with panko) but this recipe will stay in my book.
