Default Pasta fiends?

Do you make your own pasta? (do you know why Portland stores were out of semolina this week?)

Pasta is simple - just eggs, flour, a little salt and a touch of water. But making the dough the right texture can be a lot of work. Ravioli, linguini, spaghetti, it's all good. What do you make? What are your tricks? What kind of machine do you use?

Just so happens we made ravioli last night using our Kitchen Aid and pasta roller set. Used the dough recipe that came with the pasta roller. Made a spinach-ricotta-parmsan-garlic filling, yum yum! Cooked some up and froze the rest after drying them on butcher paper for an hour or so. Will definitely be doing that again! Not hard if you have the patience!
