Default Paula Dean's hot artichoke (three cheese) dip! Oh, yum!

There is an argument on the page that says that you should use 2 cups of mayo and that on the show, they used 2 cups and that this is a mistake. I used one and it IS thick, so I would use 1 1/2 or 2 next time.


But, it is OHSOGOOD!





Ingredients

  • 1 (8 ounces) block cream cheese, softened
  • 1 cup mayonnaise
  • 1 (14 ounces) can artichoke hearts, drained and chopped
  • 2 green onions, sliced thin
  • 1/2 cup grated Parmesan
  • 1 cup shredded mozzarella
  • Dash hot sauce
  • Dash Worcestershire sauce
  • Salt and pepper
Directions

Preheat oven to 350 degrees F.
In a large mixing bowl, beat the cream cheese with a hand held electric mixer until smooth. Then beat in the mayonnaise until smooth. Add remaining ingredients and stir together until combined. Transfer the dip to a pie plate or shallow gratin dish. Bake in a preheated oven for 30 to 40 minutes until the top is golden brown and the dip is bubbling. Serve hot with crackers, tortilla chips, crostini or veggies.

Sounds great!

Although it's not the same as home made, have you tried the jalapeno artichoke dip from Costco? Prepare it the same way in the oven and use your favorite whole grain cracker to spoon it out. Serve with smoked salmon and sliced pepper jack cheese, and you've got a delicious cold weather meal.

I can't stand that woman. She drives me nuts with that over the top accent stuff. But the dip does sound good.

Just tried this using 1 cup mayo and 1 cup blue cheese dressing. It is really good, but it can't be a recipe Paula came up with because it does not start with a stick of butter

You're funny, Bernie! You think that accent is a put-on? My grandma's neighbor was from Georgia and had the exact same accent. If I close my eyes when Paula is talking, I could swear it's Mrs. Dunbar come back from the grave.

That aside, I have made this dip and it seemed kind of bland for some reason. maybe I need to use real mayonnaise (*sigh*)

Just made two batches for a get together tonight. One with about a cup of crab meat, and the other with a cup of smoked salmon. Spread on a slice of sourdough, topped with shredded cheddar and broiled a couple samples.
