A great big THANK YOU, from id. painter
I have been anxious to give the thank you's , for the fantastic care package.
For anyone reading this who dosnt know the story, a quick recap.
Last winter around November, I wandered into the salty dog forum. the topic was of course , Albacore. I became very interested and excited to get a chance at catching some of these fish.
I spent the winter asking stupid questions and getting some great advice from the folks on the salty dogs.
I bought equiptment, altered my boat and learned all i could about off shore tuna fishing.I had Bait Boy lined up to help skipper my boat and show me how and what to use.
Just about the time the tuna were within range for the guys on the coast , I had a series of unfortunate , enexpected, expenses.
My wife, my self and our two children take a trip to visit my parents each summer on the North -East side of Vanvouver Is.
I had to make a choice and since the wife and kids were involved ,there really wasnt much choosing. I had to cancel the Tuna trip, to save for the British Columbia trip.
So, i got to a computer and sent a sad note about my situation to the Salty Dogs.
Now the real amazing part. These guys that i only know thru the internet, got together and started a care package to be sent to me here in IDAHO.What an awsome gesture.
The package showed up at my door containing two fresh fillets (tail section with no bones) It looked like a big Coho or chinook.
It also had a package of smoked tuna bellies and a big ol sack of smoked salmon. Then to top it all off was a case of home canned tuna. Whow.
The smoked tuna is delicious and novel for me.Thank you.
The smoked salmon is the best ive ever had. I take pride in my own smoked salmon and have never found any that i liked better than my own, you did it right and i would like to learn your tec.Thank you.
My wife had home canned tuna last winter for the first time and she fell in love with it.
Yesterday, my daughter (5 years old)and i had a jar of tuna for lunch.
After her first tast she said that she didnt want any bread with her tuna, so i filled up a cup and gave her a fork.She ate it all and mentioned how Good it was several times . Thank you.
Having you send that package was an outstandingly kind gesture,, THANK YOU VERY MUCH. It caught my wifes attention and now she has agreed(promised)to letting me drag her to a T.A. meeting this winter. She and i genuinely want to meet you and thank you in person.
Buy the way,, not a single morsel was waisted. I need to know how you smoke your salmon!! Thanks,,, Thanks,,, Thanks, id. painter.

ID. Painter, thanks man ... I really needed a lift to my spirits and today you are it. I don't know who's smoked salmon you ended up with but my gal Jen sent some vacuum packed smoked chinook in Tilia bags that was made by her, Ocean Blue. Here's how we do it.
Cut the fish into hand sized chunks. The fish should be skin on, scaled and deboned as much as possible. Then bury the chunks in rock salt in a glass dish. Refrigerate for 30 minutes, the time is critical not a minute more or less. Rinse each chunk and drain, removing all the salt. She brines it for 20 to 25 minutes and the taste is not as salty.
Rack it on pam sprayed or olive oil rubbed racks, skin side down and smoke for 12 hours (more or less to taste) with alder chips in a 'Big Chief' smoker. Burn the pans for the first four hours as fast as they will go. Flip all the pieces after 6 hours and rotate the top for the bottom rack so the bottom fish does not over cook or the top rack not cook enough.
Burn one last pan right before pulling it at 12 hours.

Hey, if you come this way for a TA meeting, remember that you are already a brother in spirit. Bring your woman and she will meet with the gals here. We will do all that is possible to accomodate you by meeting place selection, times and whatever it takes.
Can't wait to meet you and fish with you next year. You could just come over and ride with one of the dogs. It could save you considerable $$$ and make the trip possible when it would not otherwise be so. I imagine these guys would scrap over the honor of fishing with our brother from the east.

Only regret is that I didn't have a hand in this but I am still waiting to get my first Tuna and the Sea Jypzee is going to do just that for us this Sunday weather and Ocean Gods permitting
I have met several of the Ifishers at Depoe Bay earlier this year after a Halibut trip and also went out with Capt Kujo. Great bunch of gals and guy's. Oh did I forget to mention I also met the Aqua-Holic and he is a pretty fast learner, must be all the help from the Salty Dog's.

Yes she is a very good skipper, I fished with her once this year for Halibut, great day even though I was a little puny :blush:
My fingers are crossed for this weekend, hopefully I will get to meet you, from what I have read you are quite a legend around here  . Dean come on man why do you got to be like that :grin: I am house broken and don't eat much  Nancy can't wait and I will be giving you a call sometime tomorrow since I will be in the area ( Siletz tidewater) taking the boy's fishing since they have to go back to school next week He He He

ID - I'm so glad you enjoyed the fish. We had taken goodies to share at ifishstock. The salmon was "leftovers" that we were going to send home with another brother, but he left without it. I threw it in for you, hoping you'd enjoy. It was a worthy, salty fish!
The tuna is done the same way. Just salt and smoke. I tend to leave the salmon for the full 30 minutes, but I cut the time on the TUNA! short by 5-10 min depending on thickness.
Get thee here, Mr. Painter. The Ocean beckons.

Thanks again to all involved.
My summer break is over and i will be here during the week days for the winter.
As Imentioned before Im a fishaholic and i cant help think there my be time for me to jump over to your coast and catch a ride with one of the salty tuna hunters.
If the fish will be within reach for a week or so ,,, i may be able to scrape up the $ for a quicky. I could take a friday and a monday off of work and fish Sat. and Sun.
How far out are the bullets now? From Depoe? From Newport?

IDP, they are anywhere from 22 to 50 miles out of Depoe. It seems like the water is always farther out at Newport, more like 50 miles, most days.
On a regular basis I fish a seamount I call 61 degrees at 30 miles from Depoe Bay. It is not always a sure thing but pretty close. The big deal here is the afternoon wind out of the north. Hot and sunny in the south Willamette Valley means big wind at the beach. The wind rolls the water over and generates a coldwater upwelling nearshore. This causes the warm TUNA! water to retreat farther offshore.
But the wind stops eventually and the dogs go out to play.
