Made a killing on the tuna yesterday. Going to start canning tomorrow night. We are vac packing and freezing loins to eat later. I have more than I will be able to can tomorrow night.
Can I freeze it and can it later? How is the quality of canning frozen tuna? How long can I keep it on ice? Would it be ok on ice and do another batch on Wednesday night?
Vaccume packed frozen tuna cans well. If you paln to smoke it before canning remember that freezing breaks the cells opean and the fish will take on smoke faster. I wish I had your problem :grin:
