Assuming you're talking about brine before putting in the smoker....same brine mix you would use for salmon. Only difference is - tuna soak up the brine very, very quickly. If you leave your salmon in a given brine for, say 3 hours, only leave the tuna in for one hour. Unless you like it real salty!

Corse kosher salt. Rub on wait a bit and brush off. This comes from Puffin via Pilar and is good.

30 minutes in dry Rock salt coated all sides. Way to easy you say. YEP! :grin:

Rinse well and let the pellicle form. Smoke 4 hours (maybe 5 max). :grin:
