Smoked Fish Manicotti
This is a good way to use smoked fish. Fishkisser and I smoke almost all of salmoniods we catch. This is one uses baked fish and smoked fish as well.
One baked trout
1/2 cup of flaked smoked salmon or trout
1 cup of ricotta
1/2 cup of shredded asiago cheese
1/2 cup of mozzarella cheese
jar of white sauce (like alfredo)
Manicotti shells prepared (about 6, boiled)
Bake trout by stuffing with onions and sliced bell peppers season with salt, pepper, and a dash of soy sauce. Wrap tightly in foil and bake for 40 minutes.
Flake smoked fish and blend with riccota, asiago, and half of mozzarella. Add baked trout after bones are removed. Smash fish in fingers to get all of the finer bones. Mix gently and add more salt and pepper if desired.
Pour 1/2 cup of white sauce into bottom of baking dish. Stuff manicotti shells with mixture and lay close together in dish. After all are stuffed top with another 1/2 cup to 1 cup of sauce and sprinkle with remaining cheese. Add sliced green onions if you like and cover tightly with foil. Bake at 350 degrees for 40 minutes. Remove from oven and let stand un coverd for 5 minutes.
