I believe pickling hard boiled eggs is the only practical way to keep them for a long time.

1 c vinegar
2 c. water

Various spice can be added if you want. It's your choice,
Garlic
peppers
etc.
or nothing.

Good Luck

why would you want to can hard boiled eggs? They are so easy to make fresh that canning seems a little unneccessary.

If you travel in Canada you will see pickled eggs for sale in many places. I believe this is because they don't have a fresh supply of eggs available in some remote places so the only way to have eggs is to pickle them. Any other method of canning eggs would not be succesfull. They would be mush if canned. You can buy freeze dry eggs or dried eggs and they are used by back packers, but not canned eggs.

Good Luck;

I believe a fried chicken dinner or two would be his best route.
